400 g brown button mushroom, thinly sliced

30 g red onion, minced

2 cloves garlic, minced

1 tbsp low-fat unsalted margarine

2 tbsp plain flour

2 tbsp Italian mixed herbs

300 ml low-fat milk

2 cups homemade chicken stock

Salt and pepper to taste


1In a large pot, add margarine over medium heat

2Sauté onion and garlic until fragrant

3Add mushroom and cook until softened and reduced in size

4Add flour and mix to combine well

5Pour chicken stock and allow to simmer until it starts to thicken

6Add herbs and milk, then continue to cook until reduced to preferred consistency/texture

7Remove from heat, blend 1/2-3/4 of the soup until smooth

8Combine blended soup back into the pot and stir well

9Serve and enjoy immediately with fresh garlic & herb bread!
