8 whole hard-boiled eggs, peeled
3 tbsp low-fat yoghurt
1 tsp paprika (additional for dusting)
1 tsp Dijon mustard
3 sprigs of chives, finely chopped (extra for garnish)
1 whole red bell pepper, de-seeded and halved
1 tsp extra virgin olive oil
Salt & pepper to taste
1Preheat oven to 200ºC and prepare baking tray with parchment paper
2Brush bell peppers on both sides with oil
3Bake them outer side up for 30-45 minutes
4Remove from heat and remove the skin
5When cooled, finely chop them and leave aside
6Halve peeled eggs lengthwise and scoop yolks out into a mixing bowl. Leaves whites aside
7Mash and mix yolks with yoghurt, mustard, paprika, chives and chopped red pepper. Season to taste
8Spoon/pipe yolk mixture to fill egg white halves
9Dust with paprika and garnish with chives
10Serve and enjoy immediately!
