Ingredients

Shortcrust Pastry Preparation

300 g plain flour, sifted

75 g cold unsalted butter, cubed

75 g low-fat cheddar cheese, cubed

125 g cold water

Pinch of salt

Pie filling

400 g leftover roasted turkey, shredded

8 stalks spring onion, chopped

150 g white button mushroom, sliced

1/4 tsp ground nutmeg

1 tsp mixed herbs

1 tsp plain flour

1 cup baby spinach

1 tsp Dijon mustard

1 tbsp sunflower oil

200 ml low-fat milk

1 egg, beaten (for brushing)

Salt and pepper to taste

Directions

1In a large mixing bowl, mix salt and flour together

2Add butter and cheese, then use your hands to press them with the flour for about 2 minutes until it becomes yellowish

3Add cold water and mix well with a spatula

4Use hands to mould it into a ball and cling film it - refrigerate for about half an hour

Pie filling

1In a pan, heat oil over medium heat

2Add mushroom, spring onion, nutmeg, mixed herbs and mustard. Stir-fry for about 10 minutes

3Add turkey and spinach. Continue to stir fry until spinach has reduced in size Mix flour into milk

4Combine milk mixture with turkey mixture

5In a pan, heat oil over medium heat

6Add mushroom, spring onion, nutmeg, mixed herbs and mustard. Stir-fry for about 10 minutes

7Add turkey and spinach. Continue to stir fry until spinach has reduced in size Mix flour into milk

8Combine milk mixture with turkey mixture

9Allow it to reduce, then season with salt and pepper. Remove from heat and allow to cool

Assembling The Pie

1Preheat oven to 180ºC

2Over a well-floured surface, roll pastry out to about 0.5cm thick

3Place dough over a 24cm diameter flan dish and cut off the excess around the sides

4Pour prepared turkey filling

5Using the excess dough, roll it out to the size just enough to cover the pie filling

6Brush egg wash on the sides of the bottom dough, then place the dough on top

7Press down the sides with a fork to seal

8Brush the top with egg wash again, and make a small cut in the middle to let the steam out during cooking

9Bake in the oven for about 30-40 minutes, until golden brown

10Serve and enjoy immediately!
